Baghali Polo with Mahiche - an authentic Iranian dish
Ingredients:
• Mahiche (lamb shanks) for the desired number of servings
• 1 kilogram onions
• 1 cup soaked saffron
• 3 cloves of garlic
• Sufficient amount of oil
• 1 teaspoon turmeric
• 1 teaspoon black pepper
• 1 teaspoon garlic powder
• 1 teaspoon dried mint
• 1 piece of cinnamon stick
• 1 bay leaf
• Rice for the desired number of servings
• 1 cup of fresh or frozen fava beans
• 1 cup of freshly chopped dill
• 1 potato
Instructions:
1. Marinate the Mahiche with soaked saffron and let it rest in the refrigerator for one hour to absorb the flavor.
2. Cut the onions into thick slices. Spread half of them at the bottom of a pot and sprinkle the spices over them.
3. Place the marinated Mahiche on top of the onions and spread the remaining onion slices over the Mahiche. Place the cinnamon stick and bay leaf on top.
4. Pour a little oil or butter over the mixture and increase the heat to make the onions release their juices. Then reduce the heat and simmer for 4 to 5 hours over low heat. Note: During cooking, make sure to turn the Mahiche halfway through to ensure both sides are fully cooked. In the last half hour of cooking, sprinkle the soaked saffron over the dish.
Prepare your Baghali Polo during the last hour of cooking for timely serving.
