Seviyon ka Zarda Recipe:(vermicelli)
Ingredients:
• 2-3 tbsp cup Ghee
• 1 pack seviyan (vermicelli)
• 2 cloves
• 4 green cardamom pods
• 1/3 cup sugar
• 2 cups water
• A pinch of orange food color(optional)
• 1 tbsp almond, chopped
• 1 tbsp pistachio, chopped
• 1 tbsp kishmish (raisins)
• 2 tbsp coconut powder
• 3-4 tbsp balai (milk cream)
Cooking Steps:
• Sautéing Seviyan:
• Heat ghee in a pot.
• Add cloves and green cardamom.
• Add seviyan and sauté for 2 minutes until it turns light brown.
• Preparing Sugar Syrup:
• Remove seviyan from the pot.
• In the same pot, add water and bring it to a boil.
• Add sugar and pinch of orange food color(optional)
• Stir in sugar to make a sugar syrup.
• Once the sugar dissolves, add the sautéed seviyan back to the pot.
• Boiling Seviyan:
• Boil the seviyan in the sugar syrup for a few minutes until the water reduces by 80 percent.
• Simmering and Coloring:
• Reduce the flame to low and simmer until the seviyan are fully cooked, and the water dries up.
• Garnishing:
• Transfer the cooked seviyan to a serving dish.
• Garnish with chopped almonds, chopped pistachios, kishmish, coconut powder, and balai (milk cream).
Serve this delicious Seviyon ka Zarda warm, enjoying the richness of flavors and textures!
