Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1 cup vegetable oil
1 1/4 cups granulated sugar
1 cup packed brown sugar
4 large eggs
2 teaspoons vanilla extract
3 cups grated carrots (about 4-5 medium carrots)
1 cup crushed pineapple, drained
1 cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
8 oz (226g) cream cheese, softened
1/2 cup (115g) unsalted butter, softened
4 cups powdered sugar
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9x13 inch baking dish.
In a medium bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Set aside.
In a large mixing bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the grated carrots, crushed pineapple, and chopped nuts (if using) until evenly distributed throughout the batter.
Pour the batter into the prepared cake pans or baking dish, spreading it out evenly.
Bake in the preheated oven for 25-30 minutes for round pans, or 35-40 minutes for a 9x13 inch dish, or until a toothpick inserted into the center comes out clean.
Remove the cakes from the oven and let them cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
While the cakes are cooling, prepare the cream cheese frosting. In a large mixing bowl, beat together the softened cream cheese and butter until smooth and creamy.
Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
Once the cakes are completely cooled, frost the top of one cake layer, then place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
