Embark on a culinary journey with our Italian Antipasto Pasta Salad, a delightful medley of pasta, savory Italian meats, fresh vegetables, and zesty dressing. Ingredients:
8 oz rotini pasta, cooked al dente
1 cup cherry tomatoes, halved
1 cup fresh mozzarella balls, halved
1/2 cup black olives, sliced
1/2 cup pepperoncini, sliced
1/2 cup Genoa salami, sliced
1/2 cup prosciutto, sliced
1/4 cup fresh basil, chopped
1/4 cup red onion, finely diced
1/4 cup grated Parmesan cheese
For the Italian Dressing:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
1 teaspoon dried oregano
Salt and pepper, to taste
Instructions:
Cook Rotini Pasta:
Cook the rotini pasta according to package instructions. Drain, rinse under cold water, and let it cool.
Prepare Italian Dressing:
In a small bowl, whisk together extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper. Set aside.
Combine Ingredients:
In a large salad bowl, combine the cooked rotini pasta, halved cherry tomatoes, mozzarella balls, sliced black olives, sliced pepperoncini, Genoa salami, prosciutto, chopped fresh basil, and finely diced red onion.
Add Italian Dressing:
Drizzle the prepared Italian dressing over the salad. Toss gently to coat all the ingredients evenly.
Chill Before Serving:
Cover the bowl and refrigerate the Italian Antipasto Pasta Salad for about 30 minutes to allow the flavors to meld.
Garnish and Serve:
