Introduction:
Embark on a culinary journey with our Mediterranean Pasta Salad, a fusion of colorful vegetables, olives, feta cheese, and perfectly cooked pasta drizzled with a zesty vinaigrette. This refreshing salad captures the essence of the Mediterranean, making it an ideal choice for light lunches or as a vibrant side dish. 🍅🥒
Ingredients:
1 lb rotini pasta, cooked and cooled
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, finely sliced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup crumbled feta cheese
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
For the Vinaigrette:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt and black pepper, to taste
Instructions:
Cook Pasta:
Cook the rotini pasta according to package instructions. Drain, rinse under cold water, and let it cool.
Prepare Vinaigrette:
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper. Set aside.
Combine Ingredients:
In a large salad bowl, combine the cooled pasta with cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, crumbled feta cheese, fresh basil, and parsley.
Drizzle with Vinaigrette:
Pour the prepared vinaigrette over the salad ingredients. Gently toss until everything is evenly coated.
Chill Before Serving:
Cover the bowl and refrigerate the Mediterranean Pasta Salad for at least 1 hour to enhance the flavors.
Garnish and Serve:
Just before serving, garnish with extra feta cheese, basil, and a drizzle of olive oil if desired.
