Ingredients:
1 cup orzo pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Salt and black pepper, to taste
Lemon wedges, for serving
Instructions:
Cook Orzo:
Cook the orzo pasta according to package instructions. Drain and let it cool to room temperature.
Prepare Dressing:
In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper to create the dressing.
Combine Ingredients:
In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, Kalamata olives, feta cheese, red onion, and fresh parsley.
Add Dressing:
Pour the prepared dressing over the orzo and vegetables. Toss gently until everything is well coated.
Chill:
Cover the bowl and refrigerate the Greek Orzo Salad for at least 1 hour to enhance the flavors.
Serve:
Give it a final toss before serving. Garnish with additional feta and parsley if desired. Serve with lemon wedges for a citrusy kick.
