Title: Pakistani Style Chicken Curry
Ingredients:
1 kg chicken, cut into pieces
2 large onions, finely sliced
3 tomatoes, chopped
1/4 cup vegetable oil or ghee
2 tablespoons ginger-garlic paste
1 teaspoon cumin seeds
2-3 green chilies, chopped
1 teaspoon turmeric powder
2 teaspoons red chili powder (adjust to taste)
1 tablespoon coriander powder
1/2 teaspoon garam masala
1/2 teaspoon ground black pepper
Salt to taste
1/2 cup plain yogurt, beaten
Fresh coriander leaves for garnish
Instructions:
Prepare the Chicken:
Clean and cut the chicken into pieces. Marinate the chicken with half of the ginger-garlic paste, turmeric powder, red chili powder, and salt. Let it marinate for at least 30 minutes.
Sauté Onions:
In a large pot or deep pan, heat vegetable oil or ghee over medium heat. Add cumin seeds and let them splutter.
Add finely sliced onions and sauté until they become golden brown.
Add Ginger-Garlic Paste:
Stir in the remaining ginger-garlic paste and cook for 1-2 minutes until the raw aroma disappears.
Introduce Tomatoes:
Add chopped tomatoes to the pot. Cook until the tomatoes are soft and the oil starts to separate from the masala.
Spices Time:
Add turmeric powder, red chili powder, coriander powder, garam masala, ground black pepper, and salt. Mix well to combine the spices with the tomato-onion mixture.
Cook Marinated Chicken:
Add the marinated chicken pieces to the pot. Cook on medium-high heat until the chicken is browned and well-coated with the masala.
Yogurt Addition:
Reduce the heat to low, and add the beaten yogurt to the pot. Stir continuously to avoid curdling. Cook for a few minutes until the oil separates.
Simmer:
Add chopped green chilies and continue to cook on low heat. Cover the pot and let the chicken simmer until it's tender and the flavors are well absorbed, stirring occasionally.
Check for Doneness:
Check the chicken for doneness. It should be tender and the masala well-cooked. Adjust salt and spice levels if needed.
Garnish and Serve:
Garnish the Chicken Curry with fresh coriander leaves.
Serve hot with naan, roti, or steamed rice.
