how to make Okra Curry (Bhindi Masala)
Title: Okra Curry (Bhindi Masala)
Ingredients:
500 grams fresh okra (bhindi), washed, dried, and sliced into rounds
1 large onion, finely chopped
2 tomatoes, chopped
2 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1/2 teaspoon garam masala
Salt to taste
2 tablespoons vegetable oil
Fresh coriander leaves for garnish
Instructions:
Prepare the Okra:
Wash the okra thoroughly and pat it dry. Trim the ends and slice it into rounds.
Sauté the Okra:
In a pan, heat 2 tablespoons of vegetable oil over medium heat.
Add the sliced okra and sauté until it turns golden brown and the sliminess reduces. Stir occasionally to ensure even cooking. Once done, set the okra aside.
Temper the Cumin Seeds:
In the same pan, add cumin seeds to the hot oil. Let them splutter.
Sauté Onions and Green Chilies:
Add finely chopped onions and green chilies to the pan. Sauté until the onions become translucent.
Add Ginger-Garlic Paste:
Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw aroma disappears.
Introduce Spices:
Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
Incorporate Tomatoes:
Add chopped tomatoes to the pan and cook until they become soft and the oil begins to separate from the masala.
Combine Sautéed Okra:
Once the masala is well-cooked, add the sautéed okra to the pan. Gently mix to coat the okra with the spice mixture.
Simmer and Finish:
Reduce the heat to low, cover the pan, and let the okra curry simmer for 10-15 minutes. This allows the flavors to meld together.
Sprinkle garam masala and give it a final stir.
Garnish and Serve:
Garnish the Okra Curry with fresh coriander leaves.
Serve hot with roti, naan, or rice.
