Title: Tikka Chicken Masala
Ingredients:
For the Marinade:
1 kg boneless chicken, cut into bite-sized pieces
1 cup plain yogurt
2 tablespoons ginger-garlic paste
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garam masala
1 tablespoon lemon juice
Salt to taste
For the Tikka Chicken Masala:
3 tablespoons vegetable oil or ghee
2 large onions, finely chopped
1 tablespoon ginger-garlic paste
1 cup tomato puree
1 teaspoon cumin seeds
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon garam masala
1 cup heavy cream
Fresh coriander leaves for garnish
Instructions:
Marinating the Chicken:
In a large bowl, combine yogurt, ginger-garlic paste, turmeric powder, red chili powder, ground coriander, ground cumin, garam masala, lemon juice, and salt to create the marinade.
Add the bite-sized chicken pieces to the marinade, ensuring each piece is well-coated. Cover the bowl and refrigerate for at least 2 hours or overnight for the best flavor.
Cooking the Tikka Chicken:
Preheat the oven to 200°C (400°F). Thread the marinated chicken pieces onto skewers and place them on a baking tray. Bake for 20-25 minutes or until the chicken is cooked through and has a nice char.
In a large pan, heat 3 tablespoons of vegetable oil or ghee over medium heat. Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until golden brown.
Stir in ginger-garlic paste and cook for 1-2 minutes until the raw aroma disappears.
Add coriander powder, turmeric powder, red chili powder, and garam masala. Cook the spices for a couple of minutes until fragrant.
Pour in the tomato puree and cook until the oil begins to separate from the masala.
Add the baked chicken pieces to the masala, stirring well to coat the chicken with the flavorful mixture.
Pour in the heavy cream, stir, and let it simmer for 10-15 minutes on low heat until the chicken is tender and the masala has thickened.
Garnish with fresh coriander leaves and serve the Tikka Chicken Masala hot with naan or rice.
