FRANK'S RED HOT VERSION
Dry fillets with paper towel
1 bottle of Frank's Red Hot Wing Sauce
A few cups of all purpose flour in a mixing bowl
Add Salt and pepper to flour to liking
Cut Catfish Fillets in 2-3 inch wide peices
Smother and Cover Frank's sauce well and good onto fillets
Dap the fillet bites into the Flour on all sides
Heat CANOLA OIL on medium high in IRON SKILLET
Place floured fillets in hot oil until they float and turn golden brown
PUT IN YOUR MOUTH AND ENJOY THE GREATNESS

MAMA LFG'S CRUSTY CORN MEAL RECIPE (Actually Tasty)

2 parts all purpose flour to 1 part corn meal
Add Salt and pepper to flour to liking
Cut Catfish Fillets in 2-3 inch wide peices
