Ingredients:
1 pound (450g) fettuccine pasta
1 cup broccoli florets
1 cup cherry tomatoes, halved
1 cup bell peppers, thinly sliced (assorted colors)
1 cup snap peas, trimmed
1/2 cup grated Parmesan cheese
1/2 cup unsalted butter
1 cup heavy cream
3 cloves garlic, minced
Salt and black pepper to taste
Fresh parsley for garnish
Instructions:
Cook Fettuccine:
Cook the fettuccine according to package instructions. Drain and set aside.
Blanch Vegetables:
In a pot of boiling water, blanch broccoli, cherry tomatoes, bell peppers, and snap peas for 2-3 minutes. Transfer to an ice bath to stop the cooking process. Drain and set aside.
Prepare Alfredo Sauce:
In a large skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Pour in the heavy cream, stirring constantly until it begins to simmer.
Gradually add Parmesan cheese, stirring continuously until the sauce thickens.
Combine Pasta and Vegetables:
Add the cooked fettuccine and blanched vegetables to the Alfredo sauce. Toss until the pasta and veggies are coated evenly.
Season and Garnish:
Season with salt and black pepper to taste. Garnish with fresh parsley for a burst of color.
