Ingredients:
1 Cup fresh strawberries, hulled and diced
2 1/2 cups all-purpose flour
1 Tsp. Baking Powder
1/2 Tsp. baking powder
1/4 Tsp. salt
1/2 cup unsalted butter, softened
1 1/2 cups granulated sugar
3 large eggs
1 Tbsp. Strawberry or Vanilla extract
1 cup Butter milk
4 Drops Food Color Red
For the Strawberry Frosting:
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon Strawberry or Vanilla extract
3 Drops Food Color Red
Instructions:
Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a blender or food processor, puree the diced strawberries until smooth. Set aside.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
Fold in the strawberry puree until evenly distributed in the batter or add it to the buttermilk.
Spoon the batter into the cupcake liners, filling each about 2/3 full.
Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
For the Strawberry Frosting:
In a blender or food processor, or a large mixing bowl, beat the softened butter until creamy.
Gradually add the powdered sugar, one cup at a time, beating well after each addition.
Add the strawberry or vanilla extract. Beat until smooth and fluffy.
Once the cupcakes are completely cooled, frost them with the strawberry frosting.
Optional: Garnish with fresh strawberry slices or heart-shaped sprinkles for a festive touch. Enjoy your homemade strawberry cupcakes for a sweet and romantic Valentine's Day treat!
