These were the most popular dinner ordered at a Mexican restaurant that I worked at back in the 1980's. They called them Mess-skins and everyone in town loved them especially when they were filled with fajita meat. These loaded potato skins are quick and easy. You can top them with guacamole, sour cream, diced onions, chopped tomatoes, hot sauce and all the toppings you can think of throwing on them. These are a great way to have tacos when you don't want to fuss with corn tortillas. With a few simple ingredients you can make a big dish of these and take them to pot luck dinners, too.
