Quick and Healthy Mayonnaise

This simple, easy and quick mayonnaise recipe takes one minute to prepare. Using an immersion blender, you can prepare this for your family, for parties, or just in case you run out of Mayo! A healthy way of making a loved condiment for your favorite sandwiches and recipes.

Ingredients (Makes a little more than 1 cup of Mayo)

1 Egg (Room temperature only) (to be added first)
½ Tbsp Lemon Juice
1 Tsp White vinegar (preferable) or 2 Tsp apple cider vinegar
1/4 Tsp Dijon mustard or honey mustard
1/2 Tsp salt
1 cup Olive oil or Avocado oil (to be added last)

Add the ingredients in the order mentioned above and at the end add any lightly flavored oil. Insert an immersion blender and blend till all ingredients mix well together.

Tips: Use a neutral, light refined oil for mayonnaise, such as olive oil, avocado oil, grapeseed oil, canola oil, sunflower oil, safflower oil or make blended oil (a mix of extra virgin olive and vegetable oils).

DO NOT use unrefined, extra-virgin olive oil, which has a strong flavor and may cause mayonnaise to separate.
