Elevate your weeknight dinner with our Teriyaki Chicken Stir-Fry. This quick and flavorful dish combines tender chicken, crisp vegetables, and a glossy teriyaki sauce for a perfect balance of sweet and savory. Ingredients:
1 lb boneless, skinless chicken breasts, thinly sliced
Salt and black pepper to taste
2 tablespoons vegetable oil
2 cups broccoli florets
1 red bell pepper, thinly sliced
1 carrot, julienned
1 cup snap peas, ends trimmed
3 cloves garlic, minced
1 tablespoon ginger, grated
Sesame seeds and green onions for garnish
Teriyaki Sauce:
1/2 cup soy sauce
1/4 cup mirin
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch dissolved in 2 tablespoons water
Instructions:
Season and Sear the Chicken:
Season chicken slices with salt and pepper. In a wok or large skillet, heat vegetable oil over medium-high heat. Sear chicken until browned and cooked through. Remove from the wok and set aside.
Stir-Fry Vegetables:
In the same wok, add a bit more oil if needed. Stir-fry broccoli, bell pepper, carrot, and snap peas until they are crisp-tender.
Create Teriyaki Sauce:
In a small bowl, whisk together soy sauce, mirin, honey, rice vinegar, and sesame oil. Pour the sauce into the wok.
Simmer and Thicken:
Allow the sauce to simmer. Stir in minced garlic and grated ginger. Slowly add the cornstarch-water mixture to thicken the sauce.
Combine Chicken and Vegetables:
Return the cooked chicken to the wok. Toss everything together until the chicken and vegetables are evenly coated with the teriyaki sauce.
Garnish and Serve:
Sprinkle sesame seeds and chopped green onions over the stir-fry for added flavor and visual appeal.
