Instant Mashed Pancakes With Parsley & Dill

Makes 10-12 delicious potato pancakes.

Try not to eat them all. If onions are not something your kids like, they may like these after they smell all the ingredients being cooked. ☺️ The onions are mild, and their texture blends well in this recipe.

Potato Pancakes are easy to make, but they take a few minutes to brown. When you have an hour or so to spare, make them. If a bigger pan or griddle is used (than what’s shown here) more cakes can be made in less time; if needed, adjust amount of batter per cake to fit your pan. Baby cakes are cute too.

What is HELPFUL about this recipe is that chilled instant potatoes are used.

Also, cooked pancakes can be frozen, then reheated in the microwave to serve on a future date. See video.
