Welcome to our quick and flavorful Spicy Vegetable-Rice recipe! Start with 4 cups of Jasmine rice, or choose Basmati or any other low-starch rice if Jasmine is unavailable. Ensure a thorough rinse until the water runs clear. Dice 1 large sweet onion and gather a trio of colorful peppers (red, green, and yellow). Sauté the onion until golden, cooking the rinsed rice simultaneously. For vibrancy, sauté the peppers separately to maintain their texture, avoiding overcrowding in the pan. Shred or dice 2-3 large carrots, sautéing them separately. Combine the sautéed vegetables with the rice for an even mix, then season with up to 1/2 tsp (or more if you like it very spicy) Cayenne pepper and salt (to taste). This dish can be enjoyed as is or served alongside meat, fish, or a simple salad. Get ready for a delightful and customizable meal!
