Heat vegetable oil in a pan over medium heat.

Add chopped onions and minced garlic. Sauté until the onions are translucent.

Add diced tomatoes and chopped green chilies. Cook until the tomatoes are soft and the mixture forms a thick sauce.

Make small wells in the tomato mixture and crack the eggs into them. Cook until the egg whites are set but the yolks are still runny, or to your liking.

Season with salt and pepper to taste. Stir the eggs gently into the tomato mixture.

Once the eggs are cooked to your preference, remove the pan from heat.

Garnish with fresh cilantro if desired.
