Delicious mutton palao!

Here is a recipe for mutton palao:

Ingredients:
- 500 grams of mutton, cut into pieces
- 2 cups basmati rice, soaked in water for 30 minutes
- 2 onions, thinly sliced
- 4 cloves of garlic, minced
- 2-inch piece of ginger, grated
- 2 tomatoes, finely chopped
- 2 green chilies, slit in half
- 2 tablespoons oil
- 1 tablespoon ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon garam masala powder
- Salt to taste
- Fresh coriander leaves, chopped for garnish

Instructions:
1. Heat oil and ghee in a large pot over medium heat. Add the cumin seeds and let them splutter.
2. Add the sliced onions and sauté until they turn golden brown.
3. Add the minced garlic and grated ginger. Sauté for a minute until the raw smell disappears.
4. Add the mutton pieces to the pot and cook until they are browned on all sides.
5. Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook until the tomatoes are soft and mushy.
6. Add enough water to cover the mutton pieces. Cover the pot and simmer for about 45 minutes to 1 hour, or until the mutton is tender.
7. In a separate pot, boil water and add soaked basmati rice. Cook the rice until it is 70% cooked. Drain the rice and keep it aside.
8. Once the mutton is tender, add the partially cooked rice on top of the mutton in layers.
9. Place the slit green chilies on top of the rice.
10. Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes, or until the rice is fully cooked.
11. Once the rice is cooked, gently fluff it up with a fork, mixing the rice and the mutton together.
12. Garnish with freshly chopped coriander leaves.
13. Serve hot with raita (yogurt dip) or any side dish of your choice.
