Praline:

50g sugar
50g toasted nuts (walnuts, pecans, or almonds)

Cake:

175g all-purpose flour
1 tsp baking soda
2 eggs
75g brown sugar
75g caster sugar
150ml oil
1/2 tsp vanilla essence
1 tsp cake spice
1 tsp cinnamon powder
50g chopped nuts
50g sultanas
50g desiccated coconut

Frosting:

100g cream cheese
150g icing sugar
30g butter
1/2 tsp vanilla essence

🔧 Instructions:

Preheat oven to 180°C (160°C fan) and grease a 9-inch round cake pan.
Praline: Melt sugar, add nuts, spread on parchment paper, and break into pieces when cool.
Cake: Sift dry ingredients, whisk wet ingredients, combine, fold in nuts, sultanas, and coconut.
Bake for 35-40 mins; let cool in the pan.
