Introduction:
Transport your taste buds to a tropical paradise with these Shrimp and Pineapple Quesadillas. The combination of succulent shrimp, sweet pineapple, and gooey melted cheese creates a flavor explosion that's perfect for a quick and delicious meal. 🍤🍍🧀🌮✨
Ingredients:
Flour tortillas (8 medium-sized)
1 pound medium shrimp, peeled and deveined
1 cup pineapple, diced
1 cup shredded Monterey Jack cheese
1 cup shredded cheddar cheese
1/2 cup red bell pepper, diced
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper to taste
Lime wedges for serving
Sour cream and salsa for dipping
Instructions:
Prepare Shrimp:
In a bowl, season the shrimp with ground cumin, chili powder, salt, and pepper.
Cook Shrimp:
Heat olive oil in a skillet over medium-high heat. Cook the shrimp until they turn pink and opaque, usually 2-3 minutes per side. Remove from the skillet and set aside.
Assemble the Quesadillas:
On one half of each tortilla, layer a mix of Monterey Jack and cheddar cheese. Add cooked shrimp, diced pineapple, red bell pepper, and cilantro.
Fold and Press:
Fold the tortilla in half, pressing down gently to ensure it sticks together.
Cook in a Skillet:
Heat a clean skillet over medium heat. Cook each quesadilla until the cheese is melted, and the tortilla is golden brown on both sides.
Repeat:
Repeat the process for the remaining tortillas and filling.
Slice and Serve:
Remove the quesadillas from the skillet and let them cool for a moment. Slice each quesadilla into wedges.
Serve with Accompaniments:
Serve the Shrimp and Pineapple Quesadillas with lime wedges, sour cream, and salsa for dipping.
