Introduction:
Elevate your quesadilla game with these BBQ Pulled Pork Quesadillas. Packed with tender pulled pork, tangy barbecue sauce, and gooey melted cheese, these quesadillas are a fusion of smoky flavors and cheesy goodness. 🍖🧀🌶️🌮✨
Ingredients:
Flour tortillas (8 medium-sized)
2 cups cooked pulled pork
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1/2 cup barbecue sauce
1 tablespoon olive oil
Salt and pepper to taste
Sour cream and extra barbecue sauce for serving
Instructions:
Prepare Pulled Pork:
If you don't have pre-cooked pulled pork, prepare it according to your favorite recipe or use store-bought.
Assemble the Quesadillas:
Lay a tortilla on a clean surface. Sprinkle a mix of cheddar and Monterey Jack cheese on one half of the tortilla. Add a generous portion of pulled pork, red onion slices, and cilantro. Drizzle barbecue sauce over the filling.
Fold and Press:
Fold the tortilla in half, covering the filling. Press down gently to help the quesadilla stick together.
Cook in a Skillet:
Heat olive oil in a skillet over medium heat. Place the quesadilla in the skillet and cook until the cheese is melted and the tortilla is golden brown on both sides.
Repeat:
Repeat the process for the remaining tortillas and filling.
Slice and Serve:
Remove the quesadillas from the skillet and let them cool for a moment. Slice each quesadilla into wedges.
Serve with Sour Cream and BBQ Sauce:
Serve the BBQ Pulled Pork Quesadillas with a dollop of sour cream and extra barbecue sauce for dipping.
Garnish (Optional):
Garnish with additional cilantro or a sprinkle of shredded cheese.
