Stuffed Baingan Recipe

Serves - 3
Ingredients
➡️ For Baingan Stuffing
Roasted Besan - 2 Tbsp
Red Chilli - 1 tbsp
Coriander Powder - 2 tbsp
Turmeric - 1 tsp
Salt to taste
Dry Mango Powder - 1 tbsp
Roasted Peanuts - 2 tbsp
Oil - 2 tbsp
Baingan - 10
Oil - 1tbsp for shallow frying
➡️ For Gravy
Oil - 1 tbsp
Jeera - 1 tsp
Onion - 1/2 Cup
Green Chilli - 2
Garlic - 8
Salt to taste
Turmeric - 1/4 tsp
Red Chilli - 1/4 tsp
Coriander Powder - 1/4 tsp
Water - 3 tbsp
Tomato Puree - 1 Cup
Water - 2 cups
Coriander Leaves - 2 tbsp
Steps
➡️ Take a mixing bowl and add roasted Besan, spices, peanuts and Oil. Mix it well.
➡️ Make cuts in Baingan as shown in the video.
➡️ Fill the Baingan with stuffing and shallow frying on medium flame for 5 mins.
➡️ For Gravy healt Oil in a kadhai. Add jeera, onion and saute for 2-3 mins.
➡️ Add garlic and green chilli and continue Cooking for 2-3 mins until onions turn golden brown.
➡️ Add spices and leftover Masala along with some water. Give it a mix.
➡️ Add tomato Puree and cook it for 5-7 mins until oil is separated.
➡️ Add water and fried Baingan. Cover and cook on low flame for 20 mins.
➡️ Garnish with coriander leaves and serve the Sabzi with Roti, Naan or Paratha.
