You could ofcourse get 1 of them and reset and then collect the other one!
But if you want to collect it legit then you'll need New Game+

This is not the only Boss cheevo that cannot be collected at the same time :)

Whac-A-Mole [m] & Hot Hot Hot [m]

Whac-A-Mole = Beating Volvagia with only using the Magaton Hammer without any type of healing while only having 3 hearts
Hot Hot Hot = Beating Volvagia without wearing Goron's Tunic! which depends on how much Hearts you have!

12 hearts is enough to beat Volvagia with 1 Fairy Use
With 3 hearts , well even if you have all 4 bottles it won't be enough
