This week's Good Groceries is some amazing, southern-style chicken fried chicken! This shallow-fried, breaded chicken paired with some white milk gravy and mashed potatoes is a comfort meal that hits the spot every single time. You're going to love this one!

For the Chicken:
• 4 boneless, skinless chicken breasts
• 1 cup all-purpose flour
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• 1 tablespoon Blackstone Chicken Griddle
• 2 large eggs
• 1/4 cup whole milk (or buttermilk)
• Oil for frying
For the Gravy:
• 1/ 4 cup Bacon Up or 1/4 cup pan drippings (from frying the chicken)
• 1/4 cup all-purpose flour
• 2 cups milk
• Salt and pepper to taste
Instructions:
• Start by preparing the chicken. Place each chicken breast between two sheets of plastic wrap and gently pound them to an even thickness (about 1/2 inch) using a meat mallet or rolling pin.
• In a shallow dish, combine the flour and the seasonings. Mix well.
• In another shallow dish, whisk together the eggs and milk with ½ teaspoon salt and pepper.
• Dip each chicken breast into the flour mixture, ensuring they're evenly coated, then dip them into the egg mixture, and finally back into the flour mixture. Press the flour mixture onto the chicken to adhere.
• Heat frying oil on the Blackstone to a medium-high heat. You can check if the oil is hot enough by dropping a small bit of the flour mixture into the oil. If it sizzles, it's ready.
• Carefully place the breaded chicken into the hot oil. Fry for about 4-5 minutes per side or until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (74°C).
• Once the chicken is cooked, remove it from the skillet and place it on a paper towel-lined plate to drain any excess oil.
• To make the gravy, in the same skillet with the remaining oil and pan drippings, add 1/4 cup of flour. Stir constantly over medium heat for a couple of minutes to make a roux.
• Slowly pour in the milk while continuing to whisk to avoid lumps. Cook the gravy until it thickens, about 5-7 minutes. Season with salt and pepper to taste.
• Serve the chicken fried chicken hot with the creamy gravy poured over the top. You can also serve it with mashed potatoes, biscuits, or your favorite sides.
