LEEK and POTATO SOUP RECIPE INGREDIENTS

3 lbs of washed cut leeks.
3 lbs of peeled cut Yukon Gold potatoes.
3 tables spoons of kosher salt on the leeks to draw the moisture out while steaming them.
1.5 sticks of unsalted butter (cook the leeks in the butter for about 40 minutes till soft. Not sautéed).
3 Tspns white pepper added to cream blend.
3 cups of heavy whipping cream and 3 cups of buttermilk stored together.
Approx 2 quarts Chicken stock but not more than needed to cover the potatoes or your soup will be too thin.
