My version:
3 lbs boneless skinless chicken thighs
1 tsp each redmond salt and white pepper
1 tbsp taco seasoning
1 tsp chipotle powder
1/4 c chicken broth (I don't even think this was needed, so optional)
1/2 c kimchi
Put all ingredients except the kimchi into the crockpot. (I add it after taking the chicken out to preserve the probiotics)
Cook on low for about 8 hours or on high for about 4 hours or until chicken falls apart with a wooden spoon.
Mix in kimchi and serve in a folio taco shell or make your own taco shell!
