Keto Oktoberfest Food | German Pizza Flammkuchen | Sauerkraut & Ribs | Potato Pancakes | Charcuterie

Keto Oktoberfest food is not that hard! Today I'm showing you 2 of my German Dad's favorite Oktoberfest recipes along with one of my favorites which is the German pizza topped with bacon and onion.
These are not just for Oktoberfest, have them anytime!

**Sauerkraut and Ribs in the Crockpot: Rub pork ribs (2-3 lbs) with salt, pepper and paprika and broil until browned. Drain large jar of sauerkraut and place in crockpot along with sliced onions and celery, 1 tsp sage. Place ribs on top, sprinkle with caraway seeds and cook on low for 6-8 hours.

**Potato Pancakes: Grate Rutabaga (or other root vegetable like turnip, celery root). Combine 2 cups grated vegetable with 2 tbsp grated onion, 3 eggs, salt & pepper, 2 tbsp cream. Fry in hot cast iron pan (use tallow or bacon grease) or use the waffle maker like I did! Serve with sour cream and fresh dill.

**Flammkuchen (German Pizza): I made a pizza crust using PSMF bread batter. Make your favorite PSMF batter or any low carb pizza crust of your choice. For the topping I fried 6 oz double smoked bacon and then 1 large onion along with 1 6 inch piece of leek in the bacon grease. Mix 1 cup creme fraiche (sour cream or greek yogurt) with 1 egg yolk.
On your baked crust place the cream/yolk mixture, then top with onions and bacon and sprinkle with caraway seeds. Bake an additional 15-20 minutes until cream layer sets.

An Oktoberfest charcuterie board. We have been making these sausage and cheese boards forever and likely not a single one of my German tantes (aunties) knows what a charcuterie is! It's just a nice spread of European deli meats and cheeses, pickles, mustards usually with bread and butter on the side. I used the extra PSMF buns I made for myself!
