How to smoke beef jerky on the WSM. I show step by step how to prep your WSM, how to control your heat, and how to make the best homemade smoked beef jerky you've ever tasted!

Smoked Peppered Beef Jerky Recipe

4 lbs Flank Steak or Top Round
2 tsp garlic powder
2 tsp onion powder
1.5 tsp cayenne pepper
2 tsp chipotle pepper
2 tsp red pepper flakes
2 tsp cracked black pepper
1 tsp salt
1 cup water
1 cup soy sauce
2 cups worchestershire sauce
1/2 cup agave nectar (replace with honey if desired)
Fresh cracked black pepper for final seasoning before smoking.

Slice meat to desired thickness for jerky.
Add first 6 seasonings, liquids, and agave nectar or honey.
Marinate at least 12 hrs for best flavor.
Remove beef from marinade and pat dry with paper towels.
Place strips of beef onto your smoker.
Dust the strips with cracked black pepper.
Smoke strips at 150F - 175F until desired doneness (6-7 hrs).
Remove jerky and let it cool for at least an hour. Storing in your fridge the jerky should last about 5-6 weeks. If left at room temp, it should last 3-4 weeks assuming you don't eat it all before then!! Enjoy!!!
