Here's how it’s done: Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. In a food processor, combine the following: one can (450 grams) of pureed pumpkin, ¾ cup of silken tofu (190 grams), ⅔ cup of sugar (130 grams), 1 teaspoon of cinnamon powder, and ½ teaspoon of pumpkin pie spice mix. Please try to use organic ingredients where available. Process the mixture until it becomes perfectly smooth. Then take a 9-inch vegan pie crust and pour the mixture into it. Bake the pie for 40 to 45 minutes, or until it sets and the crust takes on a lovely golden hue. Allow the pie to cool to room temperature, and then slice it into six or eight pieces before you serve it.
