Thai Peanut Sauce Noodle Bowl Recipe

Peanut Sauce:
1 Clove Garlic (roasted garlic is great too)
2 Tbsp toasted sesame oil
3 Tbsp smooth peanut butter
3 Tbsp fresh lime juice (add more if needed for desired consistancy)
2 Tbsp low-sodium Tamiari
2 tsp grated fresh ginger (optional)
1.5 tsp granulated sugar
2-3 Tbsp water as needed for consistency

Salad ingredients:
4 oz Soba buckwheat noodles (use your favorite wheat noodles)
1 Tbsp olive oil drizzled on noodles
16 oz edamame shelled (thawed if frozen)
1 red bell pepper seeded and julienned
1/2 cucumber seeded and sliced
1 large carrot julienned
5 green onions chopped finely
1/4 cup ciliantro chopped finely
toasted peanuts for garnish (lightly toasted)
toasted white sesame seeds for garnish (lightly toasted)

1) Place all of the Peanut Sauce ingredients into a food processor and process until well combined. After adding the water, add more lime juice if needed for consistency.

2) Cook your noodles per package instructions. Drain noodles and rinse them under cold water to stop cooking. Place a portion of the noodles into each bowl and drizzle them with olive oil to prevent sticking. Toss noodles with oil.

3) Lightly toast Peanuts in a skillet over low heat for about 5 minutes. Set peanuts aside. Lightly toast sesame seeds over low heat for about 10 seconds. Set sesame seeds aside.

4) Into the noodle bowl, add edamame, bell pepper, cucumber, carrot, onions, and cilantro. Toss ingredients until well combined with noodles.

5) Top your noodle bowl with toasted peanuts and sesame seeds.
