Not your typical tortilla taco but stacked down the same - Flying from Tijuana, Mexico airport to Mexico city during an ancient holiday celebrated all month in loving memory of loved ones passed away. Overnight flight landed me at the Mexico City airport floor to wake up before check in to an amazing one of a kind breakfast in the taco capital of the world - "Torta de Chilaquil" Pronounced chee-lah-KEY (-lehs) a popular Mexican breakfast in the "La Roma" neighborhood traditionally made from three basic ingredients: corn tortillas, salsa and cheese. The foundation is the tortillas that are cut up and then fried. Next, simmered in red or green chili sauce until they absorb some of the sauce and become a bit soft, and then cheese is sprinkled on top. The innovator "La Guera" has been traditionally & originally combining it with a Mexican bread with added shredded or breaded chicken breast with your choice of sauce.
