centuries in East Asia as a natural coloring, preservative and for rice fermentation to produce a traditional food called “Red yeast rice”.In addition to its culinary use, this mold has been known for its therapeutic properties. In Monascus purpureus scientists have identified a variety of active components, among which the most important and most studied are the ‘statins-monacolins’ and related compounds which lower cholesterol levels in the blood.
