Brine:
4 cups water
12 tbsp apple cider vinegar
1 tbsp salt
1 tbsp peppercorns
2 tbsp sugar
Bring to a simmer and pour over beets or onions in mason jar. Cool for an hour or so and then place in the fridge for at least 24 hours before eating.
