Cooking Indoors During a Power Outage Is Easier Than You May Think

Spiced Applesauce Bread
• 1 1/4 cup applesauce
• 1 cup sugar (or 2/3 cup honey)
• ½ cup oil
• 2 eggs
• 3 T milk (omit milk if using honey)
• 2 cups flour
• 1 tsp baking soda
• ½ tsp baking powder
• ½ tsp cinnamon
• ½ tsp salt
• ¼ tsp nutmeg
• ¼ tsp allspice
• ½ cup chopped nuts
Mix together and pour into greased loaf pan. Mix together the following ingredients and sprinkle on top.
• ¼ cup nuts
• ¼ cup brown sugar
• ½ tsp cinnamon
Bake 350 degrees for 1 hour or until done.
Homemade Chicken Vegetable Soup
• 1 tbs olive oil
• 1 large onion or 1 cup freeze-dried onion or ½ cup dried onion flakes
• 3 garlic cloves minced or 3 teaspoons minced freeze-dried onion or 1 ½ tsp minced garlic flakes or ¼ tsp granulated garlic
• 2 medium carrots or 1 cup freeze-dried carrots or 3/4 cup dried carrots or one pint bottle carrots
• 2 celery ribs or 1 cup freeze-dried chopped celery or ¼ cup dehydrated celery
• 2 cups cooked chopped chicken (frozen, freeze-dried, or canned)
• ½ cup brown rice or barley
• ½ tsp black pepper
• ¼ teaspoon oregano
• 1 teaspoon basil
• ¼ thyme
• 1 bay leaf
• 1 tablespoon turmeric
• Parsley
• Salt to taste
• 1 ½ - 2 quarts water or broth
• Optional – add fresh ginger, greens, pasta, cooked beans, canned corn, green beans, and many other vegetables.
