Free Vegetable Omelette Recipe 🍳🌿

Ingredients:
3 large eggs
1/4 cup bell peppers (mixed colors), diced
1/4 cup tomatoes, diced
1/4 cup red onion, finely chopped
1/4 cup mushrooms, sliced
1/4 cup spinach, chopped
Salt and pepper to taste
2 tablespoons olive oil
Optional: Grated cheese for topping
Instructions:
Prepare the Vegetables:
Dice the bell peppers, tomatoes, and red onion. Slice the mushrooms, and chop the spinach.
Sauté the Vegetables:
In a pan, heat 1 tablespoon of olive oil over medium heat. Add the diced bell peppers, tomatoes, red onion, mushrooms, and chopped spinach. Sauté until the vegetables are tender. Set aside.
Whisk the Eggs:
Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until well combined.
Heat the Pan:
In the same pan, add the remaining olive oil and heat over medium heat.
Pour and Cook the Eggs:
Pour the whisked eggs into the pan. Allow them to set slightly at the edges.
Add Vegetables:
Spoon the sautéed vegetables onto one half of the omelette.
Fold and Cook:
Carefully fold the omelette in half, covering the vegetables. Cook for an additional minute until the eggs are fully set.
Optional Cheese Topping:
If desired, sprinkle grated cheese on top of the omelette and let it melt.
Serve Warm:
