Ingredients:
4 large flour tortillas, warmed
6 large eggs, scrambled
1 cup black beans, drained and rinsed
1 cup cherry tomatoes, halved
1 cup corn kernels (fresh or thawed if frozen)
1 ripe avocado, sliced
1/2 cup shredded cheddar cheese
1/4 cup fresh cilantro, chopped
1 tablespoon olive oil
Salt and pepper to taste
Hot sauce or salsa for extra kick (optional) 🌶️
Instructions:
Prepare Scrambled Eggs:
