SMOKED EGG CURRY MASALA RECIPE
Total Time taken 35 mins

Ingredients:
• 8 boiled eggs
• 5-6 chopped Medium size onion
• 4-5 chopped Medium size tomato
• 25-30 garlic cloves
• ½ inch ginger
• 3-4 chopped green chillies
• 1 bowl curd
• 2-3 tsp red chilli powder(depends on your taste)
• 1 tsp Garam Masala Powder
• Salt to taste
• 5-6 tbspn oil
• 1 inch cinnamon stick,4 black pepper, 2 cloves, 1 black cardamom, 1 tspn caraway seeds.

For Smoke
• 2 tsp ghee
• 3 tbsp dried fenugreek leaves(kasuri methi)
• Piece of coal

Preparation:
• Add 2 tspn red chilli powder,1 tspn garam masala powder and salt to taste in the curd bowl and keep it aside.
• Crush 1 inch cinnamon stick,4 black pepper, 2 cloves, 1 black cardamom, 1 tspn caraway seeds and keep it aside.
• Heat oil in a frying pan.
• Add onions, garlic and ginger. Fry until color changes to golden brown.
• Take them out in a bowl. Let it cool down at room temperature.
• Grind to make a fine paste. Keep it aside.
• Grind tomatoes and green chilies together to make a fine paste.

Making Gravy:
1. Heat oil in a pan and add crushed Garam masala to it.
2. When it starts to crackle, add onion-ginger-garlic paste to it.
3. When the color changes to golden brown, add tomato-chilli paste to it.
4. Cover and cook until it starts oozing oil.
5. Add curd paste to it.
6. Fry until the oil can be seen in the corners.
7. Cover and fry it on a low flame for about 8-10 mins.
8. Keep stirring in between to avoid any sticking in the pan.
9. You can add water to attain the desired consistency. Keep the gravy thick.
10. Add the boiled eggs (cut in half) to the gravy and give it a good mix.
11. Cover and cook for another 3-4 minutes on low flame.
12. Switch off the flame.

Preparation of smoke
• Take a piece of coal and heat it on high flame till it becomes red in color.
• Put a bowl in the middle of the egg curry pan.
• Keep the coal inside the bowl carefully.
• Quickly add dried fenugreek leaves on top of the coal and add 2 tbsn of ghee.
• Cover the lid. Put some weight over the lid to avoid smoke from escaping from the pan.
• Open the lid after 15 mins.
• Serve egg curry in a serving dish and garnish it with coriander leaves.
• Egg curry is ready to serve.
