The recipe for today's dish is

sourdough noodles
one cup sourdough start or discard
3 cups all-purpose flour
4 eggs
mix for ten minutes with a mixer or by hand.
allow to rest for 30 minutes
divide into 8 equal parts
run through the noodle maker
let dry on noodle rack for 2 hours.
Cook for 5 minutes.

Creamy Pumpkin pasta sauce
1 package cream cheese
1/2 cup grated parmesan cheese
2 minced garlic cloves
1/2 cup heavy cream
1/4 cup milk
3/4 tsp salt
1/4 tsp cinnamon
several grinding of fresh ground pepper
1 cup pumpkin puree
add cream cheese, parmesan cheese, garlic, heavy cream, milk, pumpkin, and spice in a pot.
Over medium heat. Heat until all the ingredients have melted, stirring occasionally. Blend with an immersion blender until smooth.
cook meatball
plate noodles, top with sauce meatballs and fresh parmesan cheese. And enjoy!
