SHOW NOTES:

Happy New Year - hope it is starting off well for you. Here are a few resolutions for you and me.

• Try some new foods - obviously health is on the table this time of year but get out of your comfort zone and try some new veggies or fruits like kohlrabi or cocktail grapefruit.
• Get some exercise – this is maybe more for me than for you, but my goal is to lose a few lbs I’ve gained over all the heavy foods of the past month. Buddy Mark doing monthly challenges so maybe I’ll do what he’s tellin everyone else to do. Check out his site at: http://bit.ly/2Riht7z
• Be less of a hack – I make this promise every year. I want to do my full due diligence for all the recipes I create from a history perspective if it’s of a classical nature or if there’s a specific technique, I’m always working to do the right thing and not take the short cut if I don’t know.
• Patience – this goes for me in the kitchen waiting for bread to rise, to treating my wife and daughter with all the love they deserve, to not honking my horn 10 times on the way home. I live in Chicago… traffic.

My Favorite Restaurant of the Past Month

Izzy’s Arcade and Bar – If you’re an 80’s kid 90’s kid then this is the place for you. Every game you grew up playing, paper boy, mortal kombat, contra, it’s heaven. Solid beer list and solid bar foods. Learn more at: http://bit.ly/2RhGiAx

Food Trends:

• Classic Techniques – I’m seeing a lot of young people start to become interested in cooking again. Whether blue plate, home chef, or some of these recipe order meals had anything to do with it, I don’t know but I love it. Obviously if you’ve been following me then you know I’m all about showcasing the basics of fundamental cookery and the techniques you need to learn to become the best home cook on the block. Food News

• Some interesting news out of France where chef Marc Veyrat lost a lawsuit against Michelin for losing his third star. FYI 3 stars is the highest and incredibly difficult to achieve. In any event he was accused of using cheddar cheese in 1 of his dishes. Dang, who knew cheddar cheese would be the leading cause to lose a start from Michelin. In any event, good luck to that chef and hopefully he can climb his way back because I’m sure it’s devastating. Learn more at: https://bbc.in/2QUStUL
