Grilled Oysters Recipe with Beer Butter

Living in Chicago and craving delicious grilled food during those long, winter months are literal misery in my life. There is nothing like looking out the back window dreaming about grilling up ribeyes and being cut down to size when you can’t even see your grill because it’s buried in snow.

Ingredients for this Recipe:

• 2 sticks of softened unsalted butter
• 2 ounces of pilsner beer
• 1 peeled and small diced shallot
• 4 finely minced cloves of garlic
• zest and juice of 1 lemon
• 1 tablespoon of finely minced fresh parsley
• 1 tablespoon of finely minced fresh tarragon
• ½ teaspoon red pepper flakes
• 24 shucked blue point or your favorite oysters on the half shell
• sea salt and fresh cracked pepper to taste

Serves 10

Prep Time: 25 minutes

Cook Time: 12 minutes

Procedures:

1. Place the grill attachment into the KitchenAid Smart Oven+ and plug it in and heat to medium heat.
2. Butter: Add the butter to a KitchenAid stand mixer with the paddle attachment and whip on high speed for 5 to 7 minutes or until light and fluffy.
3. Next add in the beer, shallots, garlic, lemon, parsley, tarragon, pepper flakes, salt and pepper and mix on low until combined. Set aside.
4. Once hot add the oysters on the half shell directly to the grill and add about 2 teaspoons of butter right to the top of each oyster.
5. Close the oven and grill for 10 to 12 minutes or until the oyster is cooked and the butter is bubbling and lightly browned.
6. Remove from the oven and serve on a platter.
