Yes, you absolutely can!
The sweet potato vine can be saved over the winter by taking cuttings from the plant. It is simple and easy!
Trim vines from the plant and stick them into some water. Pick healthy parts to save.
Take the plant stem trimmings and submerge them in water.
Keep in a warm area inside your home or greenhouse.
Make sure they get a lot of light (do not leave them outside in direct sunlight.
The roots will begin to form in a week or so. Keep the water level high and use non-chlorinated water if possible. Change the water every week or so, sooner if the water becomes cloudy.
If you have a larger number of plants you may have to separate them into smaller groups to keep the root from becoming tangled.
You can wait till late winter to place them in pots with potting mix, keep the soil moist, and feed at 1/2 strength liquid fertilizer every two weeks or so.
