Light and Quick Shrimp with Avocado and Tomato Salad

Sauteed shrimp with citrus avocado and tomato salad served over cilantro rice. This is easy and quick shrimp recipe. Avocado and tomato with lime juice dressing add lots of flavor to do dish. For lighter version add more lettuce and skip rice.

Ingredients
- 1 lbs shrimp
- 2 garlic cloves
- sweet paprika
- cilantro
- salt and pepper to taste
- 1 lime
- 1 slice of bacon for frying (you can use your favorite oil or butter)
- 1 cup cooked rice - add cilantro (optional)

For the salad:
- tomatoes
- avocado
- red onion
- salt and pepper to taste
- 1 head of romain lettuce

Lime dressing
- 0.5 oz dijon mustard
- 2 limes juiced
- 1 oz olive oil (for LOW CALORIE dressing skip the oil - it is delicious without it as well)
