Roasted Beet Salad with Goat Cheese and Walnuts is a healthy and flavorful lunch or dinner option. You can add roasted chicken or any other protein. Roasted beet s are sweet, goat cheese creamy and walnuts add crunch. Perfection!

Ingredients
- mixed greens lettuce
- 3 oz roasted chicken breast
- 5 oz roasted beetroot
- half avocado
- 3 oz cucumber
- 1.5 oz goat cheese
- 2 oz red onion
- green onion
- cilantro

- salt and pepper to taste
- balsamic glaze - optional
- 1 oz of walnuts - optional
