Vegetable Salad you can make in advance and it’s even better on the next day!

Ingredients:
1/2 medium cabbage
3 medium cucumbers
2 bell peppers
1/2 red onion
1 daikon
3 carrots
a bunch of scallions
3 garlic cloves
1 tsp coriander
1 tsp paprika
salt
pepper
1 tbsp sugar
1/2 cup boiling avocado oil
2 tbsp red wine vinegar
3 tbs white vinegar
Instructions:
1. Wash, slice and julienne all vegetables.
2. Chop the garlic and set aside.
3. Add seasonings and garlic in the middle of the bowl.
4. Heat avocado oil and pour on garlic.
5. Add vinegar and adjust salt to taste.
6. Let it stay for 20 min and its ready to serve! Cover the rest of the salad, let it stay in a fridge and enjoy on the next day!
