Special Christmas Cake Recipes - Simple and very Tasty

For the Coconut base:
Desiccated coconut 2 cups (190g)
Hot Water 1/2 cup (120ml)

For the Caramel syrup:
Sugar ½ cup (100g)
Water 2 tablespoons and 1/4 cup (60ml)
Salt 1/4 teaspoon

Fruit base:
Dates (about 1/2 cup)
Dried Fruits & Nuts 150g (about 3/4 cup)
Ginger freshly grated 1 tablespoon
Zest of a Lemon/ Lime
Zest of 1/2 an Orange
Juice of 1/2 an Orange
1 teaspoon of Cinnamon powder (OR allspice powder)
1/2 teaspoon of Cardamom powder (optional)
Golden syrup or Honey 2 tablespoons
Vanilla Extract 1 teaspoon

Finally,
2 Eggs
Melted Butter 75g (1/3 cup)
Plain flour 130g (â…” cup, 4tablespoons)
Baking powder 1 teaspoon
Baking soda ¼ teaspoon

[My measuring cup size is 240ml]

7-inch baking pan (double lined with baking paper)

Bake in a preheated Oven at 180c (356f) for 45-50 minutes

[With Alcohol]

This Rich Christmas cake has NO FLOUR! The simple recipe is based on a mix of tasty dried fruits and nuts with the help of Semolina!

For the Fruit Base:
[3 ½ cups of Dried fruits and Nuts]

Cashew nuts 130g (1 cup)
Pumpkin preserve 100g (1/2 cup)
Raisins 100g (1/2 cup)
Ginger - Glazed/preserved 50g (1/4 cup)
Dehydrated Papaya bits 50g (1/4 cup)
Candied peels 50g (1/4 cup)
Dried Apricots 50g (1/4 cup)
Lemon Zest 1 tbsp
Cinnamon powder 2 tsp
Vanilla Extract 2 tsp
Almond essence 1/3 tsp
Rose water/ essence 1/3 tsp
Golden syrup 4 tbsp
Brandy 2 tbsp

For the Cake:
Semolina 200g (1 cup)
Butter 200g (3/4 cup 1 tbsp)
Sugar 200g (1 cup)
5 Large Eggs

Pan size 25x20x6 cm
Bake in a preheated Oven at 150c (302f) for 50-60 minutes

Brown sugar 150g (3/4 cup)
Eggs 2
Plain Flour 225g (1 1/3 cups)
Baking powder 1 1/2 teaspoons
Cinnamon powder 1 teaspoon (optional)
Dried fruit mix 250g (1 1/2 cups)
Some Red Cherries (about 50g)
Milk 1/4 cup (60ml)

Baking tray size: 19x13x6 cm
Bake in a preheated Oven at 170c (338f) for 50-60 minutes
