A delicious substitute for pasta, this easy to make autumn side dish is gluten free, low carb and sure to become a family crowd-pleaser. Although they're generally available year-round, peak season for spaghetti squash begins in early fall and runs throughout the winter. The reason it’s called spaghetti squash is because the inside is stringy like a spaghetti noodle.
