Tempeh fries and Chia pudding | Two great keto vegan bites

Since I went on keto vegan I have rediscovered foods that I had neglected or simply disliked in the past but now absolutely LOVE! I'm going to show you recipes on how to turn them into foods that would nourish your body AND your palate.

RECIPES

SWEET CHILLI DIPPING SAUCE
3-4 birds eye red chillies
4 -5 medium tomatoes
Soy sauce
Olive oil
Salt

1. Drizzle generous amount of olive oil in a medium heat frying pan. Add in chopped chillies and fry till they sizzle.

2. Chop the tomatoes and add them in the frying pan with the chillies. Stew till the sauce is thickened. Add soy sauce and salt to season.

3. Place the mixture in a blender or food processor. Add a splash of olive oil and blitz till it's airy and creamy.

CHIA SEED PUDDING
3 tablespoon Chia Seeds
1 tablespoon ground flaxseed
1 cup almond milk (or other vegan milk of your choice)
1 Tbsp creamed coconut (melted)
1 Tbsp coconut oil (melted)
Some Stevia to taste

Mix all ingredients together with a fork and chill in the fridge for minimum 2 hours (or over night). Top with whatever keto goodies you like.
