This is probably one of the best aubergine (eggplant) dishes for those on keto. It's low carb/high fat, creamy and full of amazing flavours. It's keto vegan and it is delicious.

RECIPE

1 Aubergine
1 tomato
A handful of pinenuts
Parsley

TAHINI DRESSING:
2tbsp tahini
Juice of 1 lime (or 1/2 lemon)
Salt
1 tbsp olive oil
1-2 cloves of garlic (crushed into fine paste)

A couple of wedges of lime of Lemon to squeeze on finished dish

DIRECTIONS
--------------------
1. Half aubergine length way and drizzle generous amount of olive oil on top, sprinkle salt and pepper

2. Roast in preheated 230°C/450°F oven for 35-40minutes. Till the aubergine is golden brown on top and creamy in the centre.

3. Make tahini dressing by adding all TAHINI DRESSING ingredients in a bowl and whisk till creamy. Add water small amount at a time till the desired consistency.

4. Drizzle TAHINI DRESSING on the roasted aubergine generously, topped with chopped tomatoes, parsley and toasted pine nuts
