Spring greens (or large cabbage)
A head of cauliflower
Rice vinegar
Vegan mayo
salt

FILLINGS
Green nori roll:
1/2 avocado
A few spears of asparagus
1 cucumber
Wasabi (optional)

Red nori roll):
½ avocado
Umei (pickled plums)
1 carrot
A block of firm tofu
